Jack-o-Lantern Stuffed Peppers

October 14, 2020

Jack-o-Lantern Stuffed Peppers

While food photography isn’t my forte, I just had to share what I made for dinner recently! I was planning to make stuffed peppers one night and decided to have a little fun with them. I chose orange peppers instead of the red I normally go with, and I “carved” a little face into each. They were a huge hit with my toddler! (Though she deemed hers “too cute to eat”...) What I put in them: hamburger (1 lb)1 zucchini, sliced1 summer squash, sliced Pasta sauce (1 cup)2 cups jasmine …

The Best (Easy) Banana Bread

The Best (Easy) Banana Bread

Since we've been home, I have found myself trying some new recipes here and there. Admittedly, I don't have a ton of extra time on my hands. (It's hard trying to cook AND keep a toddler busy at the same time!) But I thought I'd share some of the easier/more worthwhile recipes here, just in case you're looking for something new to make! Seriously the best banana bread This is by far the best banana bread I've had in a while. It's SO easy to make, it keeps well, and even my sometimes-picky …

Easy Summer Breakfast

Easy Summer Breakfast

My sister was in town last weekend, and we had a nice Sunday breakfast together before she had to leave. A typical Sunday morning involves a nice, big breakfast, and it’s always great to share a meal with family. Rosemary scrambled eggs, grilled muffins, fresh berries… all tasty things! I grabbed some groceries from Stop & Shop yesterday on my way back to my mom’s house. Originally, I went in just to get some after-dinner ice cream treats, but there was a really good sale on blueberries, …

Learning to Cook

Learning to Cook

When I was younger, I tried pretty much everything (food-wise) - but as I've gotten older, I've recognized that I'm a picky eater. Because of that, I have only 4 or 5 recipes that I keep in constant rotation. Those recipes, plus some frozen meals and takeout here and there, would be totally fine if I was a bachelorette; but I'm not, and T wants to experience more than just the same salmon recipe every week. For a couple of weeks I tried to meal plan, using recipes I found on Pinterest, but I …

Easy Apple Crisp

Easy Apple Crisp

One of my must-have Fall desserts is apple crisp. There's something about it fresh out of the oven with the best vanilla ice cream on top that just makes the fall. I'm going to let you in on a little secret that my grandmother passed down to me: You have to use Cortland apples. Sure, you can use other kinds, but Cortlands are best for baking. For this recipe you'll need 5 Cortland apples. Cut them into wedges and remove the peel. If you're using an apple cutter like the one I'm using, …
