Life can be hectic, so I have a stash of quick recipes in the back of my mind that I can cook up when I need a (non-frozen) dinner in a short amount of time.
Pork Chops with Brussels Sprouts
Ingredients you’ll need:
Dijon mustard, maple syrup, thin sliced pork chops, salt and pepper
In a small bowl, mix two tablespoons dijon mustard and one tablespoon real maple syrup. Whisk in one tablespoon canola oil*. Coat each pork chop with mixture, then season both sides with salt and pepper. Place in a covered skillet on medium heat. Cook through.
Cut bottoms off of Brussels sprouts, then cut each in half*. Put two tablespoons canola oil in a skillet and coat sprouts in skillet oil. Sprinkle with Italian seasoning (mixture of Oregano, Thyme, and Basil). Cook until slightly browned. I like mine crispier, so cook to your liking!
Serve with applesauce.
Items marked * are things you can do ahead of time, like the day before, if you know you’ll be strapped for time.
